I prepared for the evening SHEETS in turn, as follows:

-I fried the walnut lightly, then I passed the walnut through the robot;

-I preheated the oven to 175 degrees;

-I separated 3 egg whites from the yolks, I beat them with a pinch of salt, then I added 3 tablespoons of caster sugar and I mixed until I got a firm foam;

-I added flour in the rain, I mixed carefully so that the air does not come out of the egg white foam, then I incorporated roasted and ground walnuts in the composition;

-I poured the composition in a tray lined with baking paper and then baked the sheet for about 8-10 minutes;

-I carefully removed the sheet from the tray, I did not peel off the paper and I did the same with the other 3 sheets.

The next day I prepared vanilla cream:

-I mixed the 12 yolks with 12 tablespoons caster sugar, 3 sachets of vanilla, 4 tablespoons of food starch, 4 tablespoons of freshly sifted flour, all in a double-bottomed bowl, using a whisk;

- I put the pan on low heat and I added the milk in a thin thread, stirring continuously until I obtained a cream of the consistency of a firm pudding;

-I left until the vanilla cream cooled completely, then I added the butter (or margarine) at room temperature;

Kranzul I prepared it as follows:

-I melted 8 tablespoons of sugar in a saucepan over low heat until it became liquid and obtained a beautiful golden color;

-then I poured the hot sugar on a silicone sheet, I left it to cool;

-I broke pieces of sugar by hand, then I crushed it on the robot;

-I added 250 gr. fried walnuts over caramelized sugar and we crushed them together to obtain a crispy and delicious kranz;

For whipped cream:

- I mixed the liquid cream together with the cooking cream until I obtained a firm cream. 1/2 of the cranberry obtained I incorporated in this cream.

Assembly:

-I placed a sheet on the tray / tray, carefully peeled off the baking paper and greased the sheet with a generous layer of vanilla cream;

-I sprinkled a layer of kranz over the vanilla cream, then I covered the kranz with a layer of whipped cream;

-I laid the second sheet, again carefully peeling off the paper, I greased it with vanilla cream, I sprinkled kranz and I covered it again with whipped cream .... I repeated the procedure twice more and I got a cake tall only good to decorate :)

-I covered the cake with the rest of the vanilla cream, I decorated it with whipped cream and coarsely chopped fried walnuts.

It's a lot of work, but it's definitely worth the effort because an extremely delicious cake comes out!
